The Heathen Homemaker’s Weekly Meal Plan 2016
Week 01: 01/03/16 – 01/09/16
I’ve changed my naming/numbering format for the weekly meal plans. It occurs to me that it will make more sense over the long term to name them by year and the week number of the year. This assumes, of course, that I’ll still be listing weekly meal plans 14 years from now and that someone will remember a meal plan from five or six years ago that they want to reference.
Preschool is finally starting again this week, after a long, long, long break. I’m keeping things really simple, with no new recipes.
What are you having for dinner?
This week
Sunday – potato bar (broccoli, bacon, sour cream, cheese)
Monday – chicken pot pie [1], salad, roasted carrots
Tuesday – Chili [2]
Wednesday – Leftover Palooza!
Thursday – smoked sausage and Spanish rice, cauliflower, salad
Friday – Chicken soup [3], rolls, salad
Saturday – Leftover ham bean soup over rice, salad
[1] I don’t use any particular recipe for this. Generally I put leftover chicken and whatever veggies I have around into a pie crust. Then I make my cream-of-whatever soup, pour it over and throw the whole thing in the oven. If I have two pie crusts I’ll have a topper. Otherwise I might sprinkle Parmesan and breadcrumbs on top.
[2] No recipe for this either. Brown ground beef, toss in a couple of cans of no salt organic diced tomatoes, some cooked beans, broth, cumin, oregano, cayenne, chili powder, a pinch of salt… I don’t even measure any of this. I just dump and taste. My secret recipe for the cornbread is one of my guilty pleasures: Jiffy Cornbread Mix!
[3] Another no-recipe recipe! I like to make a mirepoix at the beginning because it adds a fantastic depth of flavor. I make my own broth, so I get some out of the freezer, throw in some leftover chicken, add diced carrots and other veggies and let it simmer for a while. Not complicated!
