Week 13: 03/28/16 – 04/03/16
This week features my Casserole de Riz Réchauffé. That sounds totally intimidating, right? [insert evil laugh] That is definitely my intention! Check out the recipe though. You’ll be delighted. I promise.

This week
Monday – slow cooker whole chicken[1], roasted root veggies, salad, rolls
Tuesday – enchiladas, inspired by The Frugal South, rice, beans, avocado, pico de gallo
Wednesday – sweet mustard crock ribs, rice, Trader Joe’s veggies of some sort
Thursday – Homemade pizza using ABin5* olive oil dough[2]
Friday – Vegan night![3] spinach and chick pea rice pilaf, salad
Saturday – Pasta & meatballs[4], salad, garlic bread
Sunday – Casserole de Riz Réchauffé – you’re going to laugh when you find out what this is!
[1] Throw that bad boy into the slow cooker, rub some herbs and spices on it (or don’t) and cook it on low all day. Done!
[2] This is the recipe I use from the ABin5* book
[3] This recipe calls for feta as a garnish, but without that it is totally vegan.
[4] Nothin’ fancy here. Cook some rotini and nuke some Trader Joe’s meatballs. Make a little sauce of butter, olive oil, chopped garlic, and a little crushed red pepper. Grate a bit of Parmigiano Reggiano over each plate. You’re welcome. And for heaven’s sake, please do not use that crap in a green can.
